Ingredients

- 2 medium zucchinis, sliced
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Parmesan cheese, grated
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix sliced zucchinis with olive oil, garlic, salt, and pepper.
- Spread the zucchini mixture on a baking sheet.
- Bake for 20 minutes until tender.
- Remove from the oven and sprinkle with Parmesan cheese.
- Return to the oven for 5 more minutes.
- Serve warm.
Notes
- For a vegan option, omit Parmesan cheese.
- Feel free to add other vegetables.
