Ingredients

- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Place grated zucchini in a clean cloth and squeeze out excess moisture.
- In a bowl, combine zucchini, flour, Parmesan cheese, eggs, green onions, garlic powder, salt, and pepper.
- Mix until well combined.
- Form mixture into small patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 3-4 minutes on each side until golden brown.
- Transfer to a baking sheet and bake for 10 minutes.
- Serve warm.
Notes
- Adjust seasoning to your taste.
- Serve with a dipping sauce if desired.
- Store leftovers in an airtight container in the fridge.
