Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place grated zucchini in a clean cloth and squeeze out excess moisture.
  3. In a bowl, combine zucchini, flour, Parmesan cheese, eggs, green onions, garlic powder, salt, and pepper.
  4. Mix until well combined.
  5. Form mixture into small patties.
  6. Heat olive oil in a skillet over medium heat.
  7. Cook patties for 3-4 minutes on each side until golden brown.
