Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan.
  3. In a bowl, mix grated zucchini, sugar, and brown sugar.
  4. Add eggs, oil, and vanilla extract. Mix well.
  5. In another bowl, combine flour, baking soda, baking powder, salt, and cinnamon.
  6. Gradually add dry ingredients to the zucchini mixture. Stir until combined.
  7. Fold in walnuts if using.
  8. Pour the batter into the prepared pan.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let cool completely before frosting.
