Ingredients

- 2 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis to create zoodles.
- In a large bowl, combine zoodles, cherry tomatoes, bell pepper, and red onion.
- In a small bowl, whisk olive oil and lemon juice.
- Pour the dressing over the salad and toss to combine.
- Add feta cheese, salt, and pepper. Toss again and serve.
