Ingredients
- Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
- Olive oil: 3 tablespoons
- Garlic: 4 cloves, minced
- Fresh rosemary: 2 tablespoons, chopped (or 4 sprigs for garnish)
- Lemon: 1, juiced and zested
- Salt: to taste
- Pepper: to taste
- Carrots: 2, sliced
- Broccoli: 1 head, cut into florets
- Bell peppers: 2 (any color), sliced
Instructions
- Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
- Prepare the vegetables by slicing the carrots and bell peppers, and cutting the broccoli into florets.
- Marinate the chicken in a mixture of olive oil, minced garlic, chopped rosemary, lemon juice, and lemon zest for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Sauté the carrots and bell peppers in a skillet for about 5 minutes, then add the broccoli and cook for another 3-4 minutes.
- In the same skillet, sear the marinated chicken breasts for about 5-6 minutes on each side until golden brown.
- Return the sautéed vegetables to the skillet, arrange them around the chicken, and bake in the oven for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Let the chicken rest for a few minutes, garnish with fresh rosemary, and serve with the vegetables.
