Ingredients

  • Chicken breasts: 4 pieces (about 1.5 lbs or 680 g)
  • Olive oil: 3 tablespoons
  • Garlic: 4 cloves, minced
  • Fresh rosemary: 2 tablespoons, chopped (or 4 sprigs for garnish)
  • Lemon: 1, juiced and zested
  • Salt: to taste
  • Pepper: to taste
  • Carrots: 2, sliced
  • Broccoli: 1 head, cut into florets
  • Bell peppers: 2 (any color), sliced

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  2. Prepare the vegetables by slicing the carrots and bell peppers, and cutting the broccoli into florets.
  3. Marinate the chicken in a mixture of olive oil, minced garlic, chopped rosemary, lemon juice, and lemon zest for at least 30 minutes.
  4. Preheat the oven to 400°F (200°C). Sauté the carrots and bell peppers in a skillet for about 5 minutes, then add the broccoli and cook for another 3-4 minutes.
  5. In the same skillet, sear the marinated chicken breasts for about 5-6 minutes on each side until golden brown.
  6. Return the sautéed vegetables to the skillet, arrange them around the chicken, and bake in the oven for 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes, garnish with fresh rosemary, and serve with the vegetables.
