Ingredients
- Ground beef: 1 lb (450 g)
- Onion: 1 medium, diced
- Bell pepper: 1 medium, diced (preferably green)
- Garlic: 3 cloves, minced
- Diced tomatoes: 1 can (14.5 oz or 410 g)
- Black beans: 1 can (15 oz or 425 g), rinsed and drained
- Corn: 1 can (15 oz or 425 g), drained
- Taco seasoning: 1 packet (about 1 oz or 28 g)
- Low-sodium beef broth: 4 cups (950 ml)
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Heat olive oil in a large pot over medium heat and add ground beef, cooking until browned (5-7 minutes). Drain excess fat.
- Add diced onion, bell pepper, and minced garlic to the pot, cooking for 5-7 minutes until softened.
- Stir in diced tomatoes, black beans, corn, and taco seasoning, mixing well.
- Pour in low-sodium beef broth and combine all ingredients thoroughly.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-30 minutes, stirring occasionally.
- Adjust seasoning with salt and pepper, and serve with desired garnishes.
