  • Black beans: 1 can (15 oz or 425 g), rinsed and drained
  • Corn: 1 can (15 oz or 425 g), drained
  • Taco seasoning: 1 packet (about 1 oz or 28 g)
  • Low-sodium beef broth: 4 cups (950 ml)
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and add ground beef, cooking until browned (5-7 minutes). Drain excess fat.
  2. Add diced onion, bell pepper, and minced garlic to the pot, cooking for 5-7 minutes until softened.
  3. Stir in diced tomatoes, black beans, corn, and taco seasoning, mixing well.
  4. Pour in low-sodium beef broth and combine all ingredients thoroughly.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20-30 minutes, stirring occasionally.
  6. Adjust seasoning with salt and pepper, and serve with desired garnishes.
