This winter warmer soup is hearty and comforting, perfect for cold days.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 cup green beans, chopped
- 1 cup corn
- 1 cup potatoes, diced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute.
- Add diced tomatoes and vegetable broth. Bring to a boil.
- Add green beans, corn, and potatoes. Reduce heat and simmer for 20 minutes.
- Season with salt and pepper. Serve hot.
