Ingredients

  • 1 cup roasted Brussels sprouts
  • 1 cup diced butternut squash
  • 1/2 cup pomegranate seeds
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss butternut squash with olive oil, salt, and pepper. Roast for 25 minutes.
  3. Roast Brussels sprouts for 20 minutes until golden.
  4. In a large bowl, combine mixed greens, roasted vegetables, pomegranate seeds, walnuts, and feta.
  5. Drizzle with balsamic vinegar and toss to combine.
  6. Serve immediately.
