  • 1/2 tsp black pepper
  • 1/2 cup feta cheese, crumbled

  • 1/4 cup walnuts, chopped
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and black pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. Cook the pasta according to package instructions; drain and rinse under cold water.
  5. In a large bowl, combine the pasta, roasted squash, feta cheese, parsley, and walnuts.
  6. Drizzle balsamic vinegar over the salad and toss gently to combine.
  7. Serve chilled or at room temperature.
