Ingredients

- 8 oz pasta
- 1 medium butternut squash, peeled and cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup walnuts, chopped
- 2 tbsp balsamic vinegar
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed butternut squash with olive oil, salt, and black pepper.
- Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
- Cook the pasta according to package instructions; drain and rinse under cold water.
- In a large bowl, combine the pasta, roasted squash, feta cheese, parsley, and walnuts.
- Drizzle balsamic vinegar over the salad and toss gently to combine.
- Serve chilled or at room temperature.

- Choose any short pasta like penne or farfalle for this recipe.
