Ingredients

- 4 ripe tomatoes, chopped
- 1 onion, finely diced
- 2 jalapeños, minced
- 1/4 cup cilantro, chopped
- 1 garlic clove, minced
- 1 teaspoon salt
- 1 tablespoon lime juice
- 1/2 cup water
Instructions
- Combine all ingredients in a bowl.
- Mash the mixture lightly to release juices.
- Transfer to a clean jar, leaving some space at the top.
- Cover with a cloth and secure with a rubber band.
- Let it sit at room temperature for 3-5 days.
- Taste daily until it reaches desired tanginess.
- Once fermented, store in the refrigerator.
