Description
A healthy and colorful whole wheat pasta salad loaded with vegetables.
Ingredients

- 2 cups whole wheat pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, chopped
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook whole wheat pasta according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
- In a separate bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle feta cheese on top before serving.
Notes
- Customize vegetables as desired.
- Can be served cold or at room temperature.
- Best if refrigerated for at least 30 minutes before serving.
