- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup white chocolate, melted
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup raspberries
- 1/4 cup raspberry puree
Instructions
- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Mix in melted white chocolate, then add eggs one at a time.
- Stir in vanilla extract.
- Gently fold in raspberries and raspberry puree.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Cool completely before refrigerating for at least 4 hours.
Notes
- Serve chilled for the best flavor.
- Top with fresh raspberries or white chocolate shavings if desired.
- Store leftovers in the refrigerator for up to 5 days.
