Description

Delicious white chicken enchiladas with a creamy sauce.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup diced green chilies
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chicken, sour cream, cream of chicken soup, green chilies, garlic powder, onion powder, salt, and pepper.
  3. Fill each tortilla with the chicken mixture and roll them up.
  4. Place the rolled tortillas in a baking dish.
  5. Pour remaining sauce over the top and sprinkle cheese.
  6. Bake for 25-30 minutes until cheese is bubbly.

Notes

  • Can use rotisserie chicken for convenience.
  • Adjust spice level with jalapeños if desired.
  • Serve with fresh cilantro and lime.
