Ingredients

- White beans: 2 cans (15 oz each, drained and rinsed)
- Green chilies: 1 can (4 oz, diced) or 2 fresh green chilies, chopped
- Onion: 1 medium, diced
- Garlic: 3 cloves, minced
- Chicken broth: 4 cups (about 950 ml)
- Cumin: 1 teaspoon
- Oregano: 1 teaspoon
- Cilantro: 1/4 cup, chopped (plus extra for garnish)
- Lime juice: 2 tablespoons (freshly squeezed)
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
- Lime zest: for garnish (optional)
Instructions
- Prepare the chicken by dicing it into bite-sized pieces.
- Sauté the diced onion in olive oil until translucent, then add minced garlic.
- Add the diced chicken, season with salt, pepper, cumin, and oregano, and cook until the chicken is no longer pink.
- Stir in the drained white beans and diced green chilies.
