Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup corn, frozen or canned
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese

Instructions

  1. Place chicken breasts in the crockpot.
  2. Add onion, garlic, white beans, green chilies, cumin, chili powder, chicken broth, corn, salt, and pepper.
  3. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred chicken with two forks and stir back into the chili.
  6. Mix in sour cream and cheese before serving.
