Description
A hearty and flavorful white chicken chili made in a crockpot.
Ingredients

- 2 pounds boneless, skinless chicken breasts
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup corn, frozen or canned
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese
Instructions
- Place chicken breasts in the crockpot.
- Add onion, garlic, white beans, green chilies, cumin, chili powder, chicken broth, corn, salt, and pepper.
- Stir to combine.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred chicken with two forks and stir back into the chili.
- Mix in sour cream and cheese before serving.
Notes
- Adjust spices to your taste.
- Top with additional cheese or cilantro if desired.
- This chili freezes well for later use.
