Ingredients

  • 1 lb white beans, dried
  • 1 ham hock
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Soak the white beans overnight in water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onions, carrots, and celery. Cook until softened.
  4. Add garlic and cook for 1 minute.
  5. Drain and rinse the beans. Add them to the pot along with the ham hock, chicken broth, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
  7. Remove the ham hock. Shred the meat and return it to the soup.
  8. Season with salt and pepper. Serve hot.
