Description
A hearty and comforting soup made with white beans and ham hock.
Ingredients

- 1 lb white beans, dried
- 1 ham hock
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Soak the white beans overnight in water.
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Drain and rinse the beans. Add them to the pot along with the ham hock, chicken broth, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove the ham hock. Shred the meat and return it to the soup.
- Season with salt and pepper. Serve hot.
Notes
- Use smoked ham hock for extra flavor.
- Adjust seasoning to taste.
- Serve with crusty bread for a complete meal.
