Ingredients

- 200g vermicelli noodles
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup crushed peanuts
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 1 tablespoon sesame oil
Instructions
- Cook the vermicelli noodles according to package instructions.
- Drain and rinse under cold water.
- In a large bowl, combine the noodles, carrots, cucumber, and bean sprouts.
- Add the mint and cilantro leaves.
- In a small bowl, whisk together fish sauce, lime juice, sugar, and sesame oil.
- Pour the dressing over the salad and toss to combine.
- Top with crushed peanuts before serving.
