Ingredients

  • Pasta: 250 grams (about 8.8 oz)
  • Cherry Tomatoes: 250 grams (about 1.5 cups), halved
  • Cucumber: 1 medium, diced
  • Bell Pepper: 1 medium, diced
  • Red Onion: 1 small, finely chopped
  • Olives: 100 grams (about 3.5 oz), sliced
  • Feta Cheese: 150 grams (about 5.3 oz), crumbled
  • Olive Oil: 60 ml (1/4 cup)
  • Lemon Juice: 30 ml (about 2 tablespoons)
  • Salt and Pepper: to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Prepare the vegetables by washing and chopping the cherry tomatoes, cucumber, bell pepper, and red onion. Slice the olives and crumble the feta cheese.
  3. Make the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. In a large mixing bowl, combine the cooled pasta, chopped vegetables, olives, and feta cheese. Pour the dressing over and toss gently.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
