Ingredients
- Pasta: 250 grams (about 8.8 oz)
- Cherry Tomatoes: 250 grams (about 1.5 cups), halved
- Cucumber: 1 medium, diced
- Bell Pepper: 1 medium, diced
- Red Onion: 1 small, finely chopped
- Olives: 100 grams (about 3.5 oz), sliced
- Feta Cheese: 150 grams (about 5.3 oz), crumbled
- Olive Oil: 60 ml (1/4 cup)
- Lemon Juice: 30 ml (about 2 tablespoons)
- Salt and Pepper: to taste
Instructions
- Cook the pasta in salted boiling water until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
- Prepare the vegetables by washing and chopping the cherry tomatoes, cucumber, bell pepper, and red onion. Slice the olives and crumble the feta cheese.
- Make the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
- In a large mixing bowl, combine the cooled pasta, chopped vegetables, olives, and feta cheese. Pour the dressing over and toss gently.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
