For the cream cheese frosting:

  • Cream cheese: 8 oz (225 g), softened
  • Powdered sugar: 2 cups (240 g), sifted
  • Butter: 1/2 cup (115 g), softened
  • Vanilla extract: 1 teaspoon (5 ml)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a large bowl, mix the sugar and vegetable oil, then add buttermilk, eggs, red food coloring, and vanilla extract, beating until smooth.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  4. Fill the cupcake liners about two-thirds full with batter and bake for 18-20 minutes, checking for doneness with a toothpick.
