Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a large bowl, mix the sugar and vegetable oil, then add buttermilk, eggs, red food coloring, and vanilla extract, beating until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Fill the cupcake liners about two-thirds full with batter and bake for 18-20 minutes, checking for doneness with a toothpick.
- Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Prepare the cream cheese frosting by beating cream cheese and butter until smooth, then gradually add powdered sugar and vanilla extract. Frost the cooled cupcakes and enjoy!
