Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 cup of chopped onions
- 2 cloves of garlic, minced
- 1 teaspoon of thyme
- 1 teaspoon of sage
- Salt and pepper to taste
- 1 cup of chopped mushrooms
- 1 cup of green beans, trimmed
- 1 cup of cranberries
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and cover. Simmer for 15 minutes.
- In a skillet, heat oil over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes.
- Add garlic, mushrooms, thyme, and sage. Cook for 5 more minutes.
- Stir in green beans and cranberries. Cook until heated through.
- Fluff quinoa with a fork and mix in vegetable mixture.
- Season with salt and pepper.
- Serve warm.
Notes
- This dish can be made a day ahead and reheated.
- Feel free to add your favorite vegetables.
- Great as a side dish or main course.
