A delicious vegetarian meal perfect for Thanksgiving.
Ingredients

- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup chopped carrots
- 1 cup diced celery
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chopped mushrooms
- 1 cup green beans, trimmed
- 1/2 cup chopped walnuts
- 1/4 cup dried cranberries
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat to low, cover, and simmer for 15 minutes.
- In a skillet, sauté carrots, celery, and onions until softened.
- Add garlic and cook for 1 minute.
- Stir in thyme, salt, and pepper, then add mushrooms and green beans.
- Cook until vegetables are tender.
- Combine sautéed vegetables with cooked quinoa.
- Add walnuts and cranberries, and mix well.
- Serve warm.
Notes
- This dish can be made ahead of time and reheated.
- Feel free to add other seasonal vegetables.
