A refreshing and colorful vegetarian pasta salad with feta cheese.
Ingredients

- 2 cups pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let it cool.
- In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the feta cheese to the bowl.
- In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like olives or spinach.
- This salad can be made a day in advance.
- Adjust the amount of feta to your preference.
