Description

Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can of black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup of corn
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy.
  4. In a large bowl, combine cherry tomatoes, bell pepper, zucchini, black beans, corn, cumin, paprika, salt, and pepper.
  5. Add cooked quinoa to the vegetable mixture and stir gently.
  6. Top with diced avocado and fresh cilantro before serving.
