A delightful vegetarian dinner for New Year’s Eve that pleases everyone.
Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cherry tomatoes, halved
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 can of black beans, drained and rinsed
- 1 avocado, diced
- 1 cup of corn
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy.
- In a large bowl, combine cherry tomatoes, bell pepper, zucchini, black beans, corn, cumin, paprika, salt, and pepper.
- Add cooked quinoa to the vegetable mixture and stir gently.
- Top with diced avocado and fresh cilantro before serving.
Notes
- Serve warm or at room temperature.
- This dish can be made ahead of time and stored in the refrigerator.
