- 1 pound Brussels sprouts, halved
- 2 cups green beans, trimmed
- 3 carrots, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine Brussels sprouts, green beans, and carrots.
- Add olive oil, salt, pepper, and garlic. Toss to coat.
- Spread the vegetables on a baking sheet.
- Roast for 20-25 minutes, stirring halfway through.
- Remove from oven and drizzle with balsamic vinegar.
- Serve warm.

- Feel free to add other seasonal vegetables.
- Adjust seasoning to your taste.
