A quick and tasty vegetable stir fry with a creamy peanut sauce.
Ingredients

- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1/4 cup water
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add mixed vegetables and stir fry for 5-7 minutes.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, and water.
- Pour the peanut sauce over the vegetables and stir well.
- Cook for an additional 2 minutes.
- Season with salt and pepper to taste.
- Serve hot.
