- 1 lb beef stew meat
- 4 cups beef broth
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Brown the beef in a large pot over medium heat.
- Add the onion and garlic, cooking until softened.
- Pour in the beef broth and add the tomatoes.
- Stir in the mixed vegetables, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the bay leaf before serving.
