- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/2 cup vegan white chocolate chips
- 1/2 cup canned coconut milk
- 1/2 cup pistachios, chopped
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, melted coconut oil, and maple syrup until combined.
- Press the mixture into the bottom of a tart pan evenly.
- Bake for 10-12 minutes until lightly golden.
- In a saucepan, heat coconut milk until warm, then add vegan white chocolate chips and stir until melted.
- Remove from heat, stir in vanilla extract and salt.
- Pour the mixture into the baked tart shell.
- Sprinkle chopped pistachios on top.
- Refrigerate for at least 2 hours to set.
- Slice and serve chilled.
