Ingredients

  • 1 large cauliflower
  • 1 cup cooked quinoa
  • 1 cup walnuts, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Steam the cauliflower until tender, about 10-15 minutes.
  3. In a bowl, mix quinoa, walnuts, breadcrumbs, nutritional yeast, soy sauce, garlic, olive oil, thyme, rosemary, salt, and pepper.
  4. Stuff the mixture into the cauliflower.
  5. Place the stuffed cauliflower on a baking tray.
  6. Bake for 30-35 minutes until golden brown.
  7. Let it cool for a few minutes before slicing.
