Ingredients

- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted
- 1 packet active dry yeast
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
- 2 tablespoons beet juice for coloring
Instructions
- In a bowl, mix warm almond milk and yeast. Let it sit for 5 minutes.
- Add flour, sugar, coconut oil, vanilla, cinnamon, and salt. Mix until a dough forms.
- Knead the dough for 5 minutes. Let it rise for 1 hour.
- Roll out the dough into a rectangle.
- Spread coconut oil and sprinkle cinnamon sugar over the dough.
- Roll the dough tightly and slice into rolls.
- Place rolls in a baking dish. Let them rise for another 30 minutes.
- Bake at 350°F (175°C) for 20-25 minutes.
- Mix powdered sugar and beet juice for frosting.
- Frost the rolls after they cool slightly.
