A refreshing vegan pasta salad with a creamy tahini dressing.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. In a small bowl, whisk together tahini, lemon juice, garlic, salt, and pepper.
  4. Pour the tahini dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for 30 minutes before serving.
