Description
A refreshing vegan pasta salad tossed in a zesty lemon vinaigrette.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, diced
- 1/4 cup olives, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
- In a separate bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
Notes
- Use any pasta shape you prefer.
- Feel free to add your favorite vegetables.
- This salad can be served cold or at room temperature.
