Description

A refreshing vegan pasta salad tossed in a zesty lemon vinaigrette.


Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, diced
  • 1/4 cup olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and parsley.
  3. In a separate bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.
