Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped mushrooms
- 1 cup diced carrots
- 1 cup green beans, trimmed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add mushrooms, carrots, and green beans. Cook until tender.
- Mix in cooked quinoa, thyme, salt, and pepper.
- Serve warm.

- Can substitute vegetables based on preference.
- Make it ahead and reheat before serving.
- Pair with a vegan gravy for added flavor.
