Ingredients

- 1 cup lentils
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 bell pepper, chopped
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in the crockpot.
- Add the diced tomatoes and vegetable broth.
- Stir in the chopped onion, minced garlic, diced carrot, and chopped bell pepper.
- Season with cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.

- Adjust seasoning to your taste.
- Use any vegetables you prefer.
- Store leftovers in the fridge for up to 3 days.
