Ingredients

  • 1 bell pepper, chopped
  • 1 cup of green beans, trimmed

  • Salt and pepper to taste
  • 1 cup of cranberries
  • 1 cup of walnuts, chopped

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, heat olive oil and sauté onion and garlic until soft.
  3. Add bell pepper and green beans; cook for 5 minutes.
  4. Stir in quinoa, vegetable broth, thyme, and cranberries.
  5. Bring to a boil, then reduce heat and cover.
  6. Simmer for 15 minutes or until quinoa is fluffy.
  7. Stir in walnuts and season with salt and pepper.
  8. Serve warm for a festive touch.
