Ingredients

- 2 cups of quinoa
- 1 cup of vegetable broth
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 cup of green beans, trimmed
- 1 teaspoon of thyme
- Salt and pepper to taste
- 1 cup of cranberries
- 1 cup of walnuts, chopped
Instructions
- Rinse the quinoa under cold water.
- In a pot, heat olive oil and sauté onion and garlic until soft.
- Add bell pepper and green beans; cook for 5 minutes.
- Stir in quinoa, vegetable broth, thyme, and cranberries.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15 minutes or until quinoa is fluffy.
- Stir in walnuts and season with salt and pepper.
- Serve warm for a festive touch.
