A delicious vegan Christmas dinner that everyone will enjoy.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cranberry sauce
- 1 cup roasted Brussels sprouts
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa, reduce heat, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until softened.
- Add bell pepper, zucchini, and mushrooms, cook until tender.
- Stir in thyme, salt, and pepper.
- Combine quinoa with vegetable mixture.
- Serve with cranberry sauce and roasted Brussels sprouts.

- Adjust seasoning to your taste.
- Feel free to add other vegetables.
