A creamy and flavorful vegan broccoli cheddar soup.


Ingredients

  • 2 cups broccoli florets
  • 1 cup carrots, diced
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup cashews, soaked
  • 1/4 cup nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon turmeric
  • Salt and pepper to taste

Instructions

  1. In a pot, sauté onions and garlic until translucent.
  2. Add carrots and broccoli, cook for 5 minutes.
  3. Pour in vegetable broth, bring to a boil, then simmer for 15 minutes.
  4. Blend soaked cashews with nutritional yeast and lemon juice until smooth.
  5. Stir cashew mixture into the soup.
  6. Add turmeric and season with salt and pepper.
  7. Cook for an additional 5 minutes.
