Description
A creamy and flavorful vegan broccoli cheddar soup.
Ingredients

- 2 cups broccoli florets
- 1 cup carrots, diced
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup cashews, soaked
- 1/4 cup nutritional yeast
- 1 tablespoon lemon juice
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a pot, sauté onions and garlic until translucent.
- Add carrots and broccoli, cook for 5 minutes.
- Pour in vegetable broth, bring to a boil, then simmer for 15 minutes.
- Blend soaked cashews with nutritional yeast and lemon juice until smooth.
- Stir cashew mixture into the soup.
- Add turmeric and season with salt and pepper.
- Cook for an additional 5 minutes.
Notes
- Adjust thickness with more broth if needed.
- Store leftovers in the fridge for up to 3 days.
