- 1 cup Arborio rice
- 4 cups almond milk
- 1/2 cup coconut sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup raisins
- 1/4 cup chopped almonds
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine Arborio rice, almond milk, coconut sugar, vanilla extract, cinnamon, and nutmeg.
- Add raisins and chopped almonds to the mixture.
- Pour the mixture into a baking dish.
- Bake for 45-50 minutes, stirring halfway through.
- Remove from oven and let cool before serving.
Notes
- Store leftovers in the refrigerator.
- Reheat with a little almond milk if too thick.
- Adjust sweetness according to your taste.
