Ingredients

  • 1/2 cup unsalted butter, melted

  • 1 cup powdered sugar
  • 1 cup white chocolate, melted
  • 1 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 tablespoon gelatin
  • 3 tablespoons water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a springform pan.
  4. Bake for 10 minutes, then let cool.
  5. In a bowl, beat cream cheese and powdered sugar until smooth.
  6. Stir in melted white chocolate and vanilla bean seeds.
  7. In another bowl, whip heavy cream until stiff peaks form.
  8. Gently fold whipped cream into the cream cheese mixture.
  9. Dissolve gelatin in water, then mix into the cheesecake batter.
  10. Pour filling over the crust and refrigerate for at least 4 hours.
