- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup white chocolate, melted
- 1 cup heavy cream
- 1 vanilla bean, split and seeds scraped
- 1 tablespoon gelatin
- 3 tablespoons water
Instructions
- Preheat the oven to 350°F (175°C).
- Mix graham cracker crumbs and melted butter in a bowl.
- Press the mixture into the bottom of a springform pan.
- Bake for 10 minutes, then let cool.
- In a bowl, beat cream cheese and powdered sugar until smooth.
- Stir in melted white chocolate and vanilla bean seeds.
- In another bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the cream cheese mixture.
- Dissolve gelatin in water, then mix into the cheesecake batter.
- Pour filling over the crust and refrigerate for at least 4 hours.
