Ingredients

  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the butter and sugar together.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla bean seeds.
  5. In another bowl, mix flour, baking powder, and salt.
  6. Alternate adding the dry ingredients and buttermilk to the butter mixture.
  7. Grease the mini bundt pans and pour in the batter.
  8. Bake for 15-20 minutes or until a toothpick comes out clean.
  9. Let cool before removing from pans.
