Description
A healthy and easy version of stuffed peppers, served in a bowl.
Ingredients

- 4 bell peppers, chopped
- 1 pound ground turkey
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a skillet, sauté onion and garlic until soft.
- Add ground turkey and cook until browned.
- Stir in diced tomatoes, rice, and seasonings.
- Mix in chopped bell peppers.
- Cook for another 5-7 minutes until peppers are tender.
- Serve warm in bowls.
Notes
- You can use any color of bell peppers.
- Substitute ground turkey with ground beef or chicken if desired.
- Top with cheese for added flavor.
