Ingredients

- 2 cups vegetable broth

Instructions
- Rinse quinoa under cold water.

- Reduce heat, cover, and simmer for 15 minutes until quinoa is fluffy.
- In a large bowl, mix cooked quinoa, cranberries, pecans, green onions, and parsley.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour dressing over the quinoa mixture and toss to combine.
- Serve warm or at room temperature.
Notes
- This dish can be made a day in advance and stored in the refrigerator.
- Substitute walnuts for pecans if preferred.
- Feel free to add other ingredients like feta cheese for extra flavor.
