- 1 turkey (12-14 lbs)
- 2 cups quinoa
- 1 cup cranberries
- 1 cup pecans
- 4 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Rinse the quinoa and cook it in vegetable broth for 15 minutes.
- In a large skillet, heat olive oil over medium heat.
- Add onions, garlic, carrots, and celery. Sauté until soft.
- Stir in cranberries, pecans, and thyme. Mix well.
- Add cooked quinoa to the skillet. Season with salt and pepper.
- Stuff the turkey with the quinoa mixture.
- Place the turkey in a roasting pan and cover with foil.
- Roast for 3 hours, removing foil for the last 30 minutes.
- Let the turkey rest for 20 minutes before carving.
Notes
- Make sure the turkey is thawed completely before cooking.
- Adjust the seasoning to your preference.
- Serve with a side of your favorite Thanksgiving vegetables.
