Ingredients

  • 2 cups quinoa
  • 1 cup cranberries
  • 1 cup pecans
  • 4 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Rinse the quinoa and cook it in vegetable broth for 15 minutes.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add onions, garlic, carrots, and celery. Sauté until soft.
  5. Stir in cranberries, pecans, and thyme. Mix well.
  6. Add cooked quinoa to the skillet. Season with salt and pepper.
  7. Stuff the turkey with the quinoa mixture.
  8. Place the turkey in a roasting pan and cover with foil.
  9. Roast for 3 hours, removing foil for the last 30 minutes.
  10. Let the turkey rest for 20 minutes before carving.
