Description

Ingredients

  • 1 cup ube puree
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 1 package ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a bowl, mix ube puree, mascarpone cheese, sugar, and vanilla extract until smooth.
  2. In another bowl, whip heavy cream until stiff peaks form.
  3. Gently fold whipped cream into ube mixture until combined.
  4. Dip ladyfinger cookies in coffee briefly.
  5. Layer dipped ladyfingers at the bottom of jars.
  6. Add a layer of ube mixture on top of ladyfingers.
  7. Repeat the layers until jars are filled.
  8. Refrigerate for at least 4 hours before serving.
  9. Dust the top with cocoa powder before serving.
