Description

Twice baked potatoes are a delicious and hearty side dish. They are baked, mashed, and then baked again with toppings.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheese
  • 1/4 cup green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce potatoes with a fork.
  3. Bake potatoes for 45-60 minutes until tender.
  4. Let potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the insides into a bowl, leaving a small border.
  6. Add sour cream, milk, cheese, green onions, salt, and pepper to the bowl.
  7. Mix until smooth and creamy.
  8. Fill potato skins with the mixture.
  9. Top with extra cheese if desired.
  10. Return to the oven and bake for an additional 15-20 minutes.
