Description
Twice baked potatoes are a delicious and hearty side dish. They are baked, mashed, and then baked again with toppings.
Ingredients

- 4 large russet potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 1 cup shredded cheese
- 1/4 cup green onions, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce potatoes with a fork.
- Bake potatoes for 45-60 minutes until tender.
- Let potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides into a bowl, leaving a small border.
- Add sour cream, milk, cheese, green onions, salt, and pepper to the bowl.
- Mix until smooth and creamy.
- Fill potato skins with the mixture.
- Top with extra cheese if desired.
- Return to the oven and bake for an additional 15-20 minutes.
Notes
- You can add bacon bits for extra flavor.
- Use any cheese you prefer.
