Ingredients

- 2 cups of cooked white beans
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Pepper to taste
- 2 cups kale, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in the cooked white beans, vegetable broth, and diced tomatoes.
- Add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the kale and cook for an additional 5 minutes.
- Serve hot.
Notes
- Use fresh or dried herbs as preferred.
- Feel free to add other vegetables.
- This soup can be stored in the fridge for up to 5 days.
