Ingredients

- 1 cup red lentils
- 1 medium onion, chopped
- 1 carrot, diced
- 1 potato, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Juice of 1 lemon
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in carrot and potato, cook for 5 minutes.
- Add lentils, cumin, salt, and pepper.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Puree the soup for a smooth texture if desired.
- Add lemon juice before serving.
Notes
- Adjust spices according to your taste.
- Store leftovers in the fridge for up to 3 days.
- Can be frozen for later use.
