Ingredients

  • 2 pounds turkey breast, boneless
  • 1 cup spinach, chopped
  • 1 cup mushrooms, diced
  • 1/2 cup cream cheese, softened
  • 1/4 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the turkey breast and pound it flat.
  3. In a skillet, heat olive oil and sauté garlic, mushrooms, and spinach until soft.
  4. In a bowl, mix cream cheese, parmesan, sautéed vegetables, thyme, salt, and pepper.
  5. Spread the mixture over the turkey breast.
  6. Roll the turkey tightly and secure with kitchen twine.
  7. Season the outside with salt and pepper.
  8. Place in a baking dish and roast for 1 hour.
  9. Let rest for 10 minutes before slicing.
