A savory turkey roulade perfect for Thanksgiving.
Ingredients

- 2 pounds turkey breast, boneless
- 1 cup spinach, chopped
- 1 cup mushrooms, diced
- 1/2 cup cream cheese, softened
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon thyme, dried
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the turkey breast and pound it flat.
- In a skillet, heat olive oil and sauté garlic, mushrooms, and spinach until soft.
- In a bowl, mix cream cheese, parmesan, sautéed vegetables, thyme, salt, and pepper.
- Spread the mixture over the turkey breast.
- Roll the turkey tightly and secure with kitchen twine.
- Season the outside with salt and pepper.
- Place in a baking dish and roast for 1 hour.
- Let rest for 10 minutes before slicing.

- Serve with cranberry sauce.
- Can be prepared a day in advance.
