Ingredients

  • 1 whole turkey (1214 lbs)
  • 1 cup unsalted butter, softened
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 cups chicken broth
  • 1 onion, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. Rub the softened butter all over the turkey, including under the skin.
  4. Season the turkey with salt and pepper.
  5. Stuff the cavity with onion, carrots, and celery.
  6. Place the turkey in a roasting pan and pour chicken broth around it.
  7. Sprinkle thyme and rosemary over the turkey.
  8. Cover with aluminum foil and roast for 2 hours.
  9. Remove foil and roast for an additional 1-2 hours until the internal temperature reaches 165°F (75°C).
  10. Let the turkey rest for 20 minutes before carving.
