Ingredients
- Ground turkey: 1 lb (450 g)
- Kidney beans: One can (15 oz or 425 g), drained and rinsed
- Black beans: Another can (15 oz or 425 g), drained and rinsed
- Diced tomatoes: One can (28 oz or 800 g), with juice
- Onion: One medium, chopped
- Garlic: Three cloves, minced
- Chili powder: Two tablespoons
- Cumin: One tablespoon
- Bell peppers: Two (any color), chopped
- Salt and pepper: To taste
- Olive oil: One tablespoon
Instructions
- Prepare all ingredients by chopping the onion and bell peppers, mincing the garlic, and rinsing the beans.
- In a large pot, heat olive oil over medium heat, then sauté the onion and bell peppers for about five minutes.
- Add minced garlic and cook for another minute, then add ground turkey, seasoning with salt, pepper, chili powder, and cumin. Cook until browned.
- Stir in the kidney beans, black beans, and diced tomatoes, mixing well.
- Bring to a gentle boil, then reduce heat to low and let simmer for 20-30 minutes.
- Adjust seasoning if needed, garnish with fresh cilantro, and serve warm.
