Description

Traditional Persian New Year cake, also known as ‘Cake-e Nowruz’, is a festive dessert served during the Nowruz celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 cup yogurt
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup ground almonds
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together butter and sugar.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in yogurt and vanilla extract.
  5. In another bowl, combine flour, baking powder, baking soda, salt, and ground almonds.
  6. Gradually add dry ingredients to the wet mixture.
  7. Fold in orange zest and chopped walnuts.
  8. Pour the batter into a greased cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Notes

  • Serve with tea or as part of the Nowruz feast.
  • Can be decorated with powdered sugar or nuts on top.
  • Store leftovers in an airtight container.
